Pizza Friday is a big deal in my household but when I’m trying to cut back on my calories, it’s not the best. I love pizza though so I wanted something that would be healthier but still work in that craving. My husband bought an eggplant for grilling and when Friday rolled around, he still hadn’t cooked it so I decided to try my hand at something brand new.
This eggplant pizza came out so good that my kid who doesn’t eat anything actually ate two of them when I couldn’t finish them all. In total, I calculated that all twelve of the mini eggplant pizzas I made would have come to only 438 calories. Unlike the cauliflower pizza I’d been eating, this filled me up before it was gone so there were leftovers! In all, I’d only consumed 365 for my very filling dinner!
One last thing I want to mention is that I personally did not like the taste of the skin so I did peel the skin off after my pizzas were cooked. I recommend peeling the eggplants but that’s just my preference! Enjoy your eggplant pizza!
Ingredients (about 12 servings)
Eggplant, cut into 1/2 inch slices
12 grape or cherry tomatoes
One onion
One pepper
1/2 cup mozzarella cheese
1/2 cup tomato sauce
Salt, pepper, garlic powder
Directions
1. Preheat the oven to 400 degrees.
2. Peel eggplant, if desired. I tried it both ways and decided it was much better without the skin!
3. Place eggplant slices along a cookie sheet. I used aluminum foil and did not need to oil them up. Sprinkle them with salt, pepper, and a little bit of garlic powder.
4. Cook the eggplant for approximately 15 minutes to soften a bit.
5. While the eggplant cooks, dice the pepper, half of an onion, and about half of a pepper. Halve the grape tomatoes.
6. Remove the eggplant slices from the oven and drizzle them with the tomato sauce, then place some sliced onions and peppers on top of the sauce.
7. Return the vegetable-covered eggplant slices to the oven for 10 more minutes.
8. Remove the slices one more time and drizzle with mozzarella cheese and halved tomatoes for about 5 more minutes or until the cheese is melted and tomatoes softened.
9. Serve with a knife and fork, these are soft pizzas that are messy to eat by hand!
