The kids have really shown an interest in baking lately so we wanted to come up with a fun Valentine’s Day treat that they could help with. People always compliment my banana bread and the recipe is incredibly easy so I decided that would be a good and delicious place to start. Instead of using a loaf pan, we used a non-stick mini heart cake pan for these little hearts. Since these hearts are much smaller than a loaf, one batch of this recipe should yield about 18 mini banana bread hearts. I only used one of these pans and just kept re-filling it after they were baked and cooled (which was a long process!) but if you’d like a smaller batch, just divide up the recipe!
Banana bread ingredients:
1 c flour
1/2 tsp salt
1 tsp baking soda
1/2 c butter/margarine
1 c white sugar
1 c mashed overripe bananas
2 eggs, beaten
1/2 c chopped walnuts (optional)
Directions: Preheat the oven to 350°. Grease and flour each cavity of your heart pan. Sift the flour, salt, and baking soda into one bowl. In a separate bowl, mix together the butter and sugar until it is smooth. Stir in the bananas, eggs, and walnuts until it is well-blended. Pour the wet ingredients into the dry mixture, and stir it all together. Pour into each heart about 3/4 full. Bake about 15 minutes. (Keep an eye on this as I’ve learned different ovens may vary your baking time!) Once completely cooled, pop out onto parchment paper.
Frosting ingredients:
2 tablespoons butter, softened
1 1/4 cups powdered sugar
3 tablespoons milk
1/2 teaspoon vanilla extract
Toppings of choice
Directions: Mix all ingredients together and drizzle over banana breads. Decorate with sprinkles, colored frosting, anything you desire! The kids absolutely had the most fun with this part!
