Orange Beef Stir-Fry Over Rice

We’ve been trying to broaden our dinner horizons lately. It gets boring to have the same meals week in and week out. My husband is often more adventurous than I am in the kitchen but I toyed around with a beef stir-fry that I’m really thrilled with and so is the family!

1 orange, juiced
1 lb Stir-fry beef strips
1 tablespoon orange zest
1/2 teaspoon orange extract
1/4 cup water
1 tablespoon cornstarch
1 tablespoon soy sauce
1/2 teaspoon sesame oil
pinch of red pepper
3 carrots, peeled into strips
1 head of broccoli

1. In a frying pan, heat a little bit of canola oil and cook the beef through. Then remove it from the pan and set it aside.

2. Fry broccoli and carrots in the pan with the orange extract until desired softness.

3. Mix the orange juice, water, cornstarch, soy sauce, sesame oil, zest, and red pepper together.

4. Add the liquid mixture in with the vegetables, then add the beef.

5. Serve over rice and enjoy!
