February is National Hot Breakfast Month and breakfast is my absolute favorite meal! Nothing beats a short stack of fluffy pancakes and a crispy piece of bacon, plus I really enjoy those “dippy” eggs over medium. Breakfast in the morning isn’t often a treat for me because we’re catching three different buses and trying to get everyone ready and out the door. I have to remember to take some meat out of the freezer to thaw for dinner and then drop everything I’m doing to cook dinner in the evening… unless I combine all of these hassles into one solution and MAKE BREAKFAST FOR DINNER.
Somehow, I forgot this was even an option until recently. How could I forget that breakfast doesn’t have to be done in the morning?! I knew it would be a treat for everybody if we skipped the usual lasagna or baked chicken for a tasty PANCAKE BAR courtesy of Krusteaz!
The prep involved here was absolutely minimal, no remembering to take things out ahead of time and no need for long cook times. When I started to beat eggs for the scrambled eggs, the kids got suspicious. When they saw me put the bacon on, they got excited. But when the pancakes started to take form, they were shouting, “It’s breakfast! Mommy’s making breakfast for dinner!” I was a hero!
Since we had a birthday in the house, I wanted to make it really special by upping the ante and present them with a pancake bar. I filled small bowls with chocolate and peanut butter chips, walnuts, and other tasty treats. I brought out the whipped cream and let everyone decide how to have their pancakes!
Not only was it really sweet (pun!) to see how happy the kids were, but I got to sit down and actually savor a favorite meal of mine without all of the rushing around. What a treat for me! I had a lot of fun making the pancake bar and decided that we’ll actually do that a lot more. We’re going to pick up different types of syrup and fruit toppings and really go all out with it!
The kids said that the Krusteaz Buttermilk Pancakes were delicious and fluffy but since I’ve actually started getting into fitness lately (I know, I don’t believe it either!), I went with the Krusteaz Protein Buttermilk Pancakes and they were just as tasty! Since I actually had a few leftover, I decided to refrigerate them and guess what, I treated myself again to some leftover pancakes the next day. Yep, still delicious!
To be able to give ourselves a scrumptious delight in the evenings, I’m planning on doing a lot more breakfasts for dinner with at least one pancake bar a month. It’s simple, always appreciated, it’s yummy, and it would really make us all happy!
