My husband loves to cook and he’s always trying new things. He adores stuffing chicken, pork, etc. with all kinds of things. His chicken stuffed with spinach & Feta cheese has been my absolute favorite thing to date and in honor of National Spinach Day, I thought I’d share! The cheese, which I’ve only ever had in this dish, really complemented the chicken and it was the most delicious flavor. All of the credit, including pictures, goes to my hubby!
Ingredients
1/2 cup mayonnaise
1/2 cup crumbly Feta cheese
5 oz of fresh spinach or 10 oz of frozen spinach, thawed and drained
3 garlic cloves pressed
1/4 lb Prosciutto
3 chicken breasts, the thicker the better
Directions
1. Preheat the oven to 375°.
2. Chop the spinach and place it into a bowl.
3. Mix the spinach, mayonnaise, Feta and garlic in the bowl.
4. Butterfly the chicken and pound it flat.
5. Spread the spinach mixture onto the top of the chicken.
6. Starting at the point of the butterfly, roll up the chicken with the mixture inside.
7. Wrap the chicken in priscuttio and pin it with toothpicks to keep it closed.
8. Place in the oven for at least an hour.
9. Cut to make sure the chicken is cooked and the juices run clear. Mmm, enjoy!
