Several years ago, we started making our own chicken noodle soup in my household. My husband and I have our own variations of what tastes the absolute best but one thing is true…the basic recipe is very simple! Since it is such a basic recipe, you can really tweak it in many different ways. In the example I photographed below, I used both dark and light meat parts from two leftover roaster chickens that we had. My husband loves to go heavy on the chicken so I decided to put a lot in and it came out wonderful, as usual! It’s recommended to salt and pepper to taste so of course, he added much more salt to his own bowl before he ate it. The kids love this chicken noodle soup and it makes for a great lunch, dinner, or even a snack!
Easy Chicken Noodle Soup
Ingredients:
1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
1/2 pound chopped cooked chicken breast
1 1/2 cups egg noodles
1 cup sliced carrots
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper to taste
Directions:
In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes.
Pour in chicken and vegetable broths.
Stir in chicken, noodles, and carrots.
Add basil, oregano, salt and pepper and stir well.
Bring to a boil, then reduce heat and simmer 20 minutes before serving. Enjoy the deliciousness!
