With the abundance of eggs we now have in my home, I’ve decided to step up my baking. I asked the kids what kinds of treats they’d like to see on the table and everyone was clamoring for muffins. They’re portable, a nice snack when you’re running around. The baby specifically requested strawberry but my husband wanted chocolate chips, so I decided to combine the two. I went with semi-sweet chocolate chips but I was thinking that strawberry does seem to pair well with white chocolate so that’s something to consider as you plan to make these delicious strawberry chocolate chip muffins!
Here’s what you’ll need:
2.5 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup sugar
1/2 cup brown sugar
1 1/4 cups applesauce
2 egg whites
1 1/3 cups strawberries, diced
2/3 cup chocolate chips
This recipe should yield about a dozen and a half muffins.
Directions:
1. Preheat oven to 350°.
2. Mix the flour, baking soda, cinnamon together in one bowl.
3. In another bowl, mix the brown sugar, sugar, applesauce in another. Add the egg whites and whisk it all together.
4. Pour the wet mix into the dry mix and stir it up until combined.
5. Add in the strawberries and chocolate chips and stir it all up again.
6. Spray your muffin tins and fill about 3/4 full with mix.
7. Bake for 15-20 mins.
8. Enjoy! These strawberry chocolate chip muffins can be frozen and heated in the microwave at about 30-45 seconds, making them great for quick breakfasts!
This is a great combination I know my kids would love!
